It’s summer! Finally, our hibernating in the polar vortex dreams have come true.
Even though the summer solstice was technically last week, I’ve been declaring summer ever since the temps hit 50 degrees. I was just ready. Now that it’s actually getting hot out, I find myself wanting to eat lighter and back off the stove a bit. Plus there’s the whole needing-to-be-seen-in-a-swim-suit thing. Let’s just eat healthy.
I’ve compiled some of my favorite light and easy meals (and desserts!) perfect for summer. Nourish your body, enjoy your meal, and don’t spend all this sunshine time working on or working off dinner.
