Happy Memorial Day! For many summer officially begins today. We’ve already been enjoying the warm weather around here with trips to the park and splash time in the inflatable kiddie pool. Over at Dine and Dish I’m loving Kristen’s list for summer fun. I’m just not sure my pregnant self would have the energy and motivation to get much of it done. Inspiring, nonetheless.
I don’t know why I’m still gravitating towards cold weather foods like baked pastas and pizzas, but I’m sure I’ll pull out some light summer fare once the farmer’s markets really get going around here. We have a party to go to tonight, so we’ll just be taking a salad rather than making an entire meal. Hopefully you have something fun planned as well. We also won’t be eating dinner at home Friday night, but I planned something anyways in case we need lunch or something else to eat over the weekend. Here’s what the week looks like:
Monday – Tortellini Pasta Salad
Tuesday – Tomato, Onion, and Arugula Pizza and Classic Sausage Pizza
Wednesday – Spinach and Artichoke Mac and Cheese with organic packaged salad and bread
Thursday – Baked Creamy Chicken Taquitos with sour cream, avocado slices, and rice
Friday – Spaghetti alla Ceci with organic packaged salad
