The Monday Menu 6/25/2012


Welcome to The Monday Menu! I had a busy baking weekend but am still looking forward to getting in the kitchen this week. I had a hard time coming up with my menu this week because its supposed to be crazy hot in a few days and I apparently don’t know how to make dinner without turning on my oven.

For the hottest days I tried to choose meals that could be made on the grill or stovetop. I have to say I’m pretty excited about what I came up with. I’m trying three new recipes this week, which is a little ambitious, but they all sound delicious. If they work out I’ll be sure to share them with you in the future. Here’s the plan:

Monday – BBQ Chicken with mashed potatoes, corn, watermelon and cornbread
Tuesday – Cheesy Chicken Enchiladas with homemade queso dip
Wednesday – Red Pepper Pesto Pasta with organic packaged salad mix
Thursday – Grilled Broccoli and Bean Open Faced Sandwiches with fresh fruit
Friday – Salmon Burgers with chips and fresh fruit

    MMMMMMM. Bacon. lol

    Salmon burgers, yum. Are you doing a flaked patty or a whole piece “sushi” burger?

    Monday: sausage pizza, salad
    Tuesday: peanut noodles (Smitten Kitchen recent post)
    Wednesday: pad thai
    Thursday: pad thai…..again because it’s yummy and I’m just now finding my groove with it
    Friday: not sure…. either a peppered beef salad or taking the beef more mexican style with beans and guac (if i can find decent avacadoes!)

      I’m going cheap with a flaked patty. I’ve never had pad thai, I’ll have to put that on my list of things to try!
