The Monday Menu 7/9/2012

Pico de Gallo with avocado

Welcome to The Monday Menu! I have another abbreviated week for you. My husband’s sister is getting married this weekend so we get to attend the rehearsal dinner on Friday. Other than that I’ve tried to keep things cheap and easy for the rest of the week. Here’s what I have planned:

Monday – Pesto Chicken Pizza with organic packaged salad mix
Tuesday – Chicken Sandwiches with baby carrots and fresh fruit
Wednesday – Ground Beef Tacos with pico de gallo with avocado
Thursday – Spaghetti Aglio Olio with spinach and white beans
Friday – Rehearsal Dinner

What’s on your menu this week?

    Weddings are such happy occasions!
    We’re traveling this week, so I’m also trying to keep things simple. Basically leftovers and clean out the fridge. :)

    Monday: burgers/fries (Burgers leftover in freezer from last time we grilled.)
    *If I can get good avacados I’m totally making your pico as a topper!

    Tuesday: carbonara w/ kale

    Wednesday: pizza, salad (always have a dough on hand!)

    Thursday: chicken pesto wraps (packed for the trip so we don’t have to eat airport food!)

    Friday: some sort of oysters if I’m lucky!
