Welcome to The Monday Menu! As suspected last week was a rough cooking week. I fell ill with what my son had been battling for over a week. I barely made it to the grocery store and my poor (ok, maybe lucky) husband got to eat his fill of fast food. That being said, you’ll see a few repeats on the menu from last week (and even the week before) that I wasn’t able to get to. It will happen this week! Also, my husband will be unable to join us for dinner three nights this week. I thought that would be a good opportunity to make some things he doesn’t like and stretch some meals. Here’s the plan:
Monday – Chili Lime Chicken with Mexican Rice and corn tortillas
Tuesday – Penne with Tomato, Feta, and Basil with packaged salad
Wednesday – Loaded Baked Potatoes with Oven Roasted Broccoli
Thursday – White Bean Crostini with slow cooked potatoes, onions, and carrots
Friday – Leftovers or dinner with family
