Welcome to another week at The Monday Menu! This week I plan to start some freezer cooking for when the baby comes. I plan to make a double batch of at least one meal each week and freeze one to ease prep time. This is not something I ordinarily do or feel confident in, and I’m hoping its not too soon to start. I’m due in 8 weeks, so I won’t be eating the frozen meals for at least that long. I assume most things keep for at least three months without losing much quality.
Lasagna will be my double this week. I’m also excited to try a couple new recipes. I’m finally getting my camera back after about three weeks in the shop and I can’t wait to get back into taking delicious pictures for you. Hopefully all turns out well. Here’s the plan:
Monday – Turkey Panini with fresh fruit
Tuesday – Chicken Piccata Salad
Wednesday – Roasted Vegetable Lasagna with packaged salad
Thursday – Quinoa and Veggie Stuffed Peppers with dinner rolls
Friday – English Muffin Pizzas with fresh fruit or leftover salad
