Happy Monday! I hope you had a great weekend. Was anyone able to make it to any farmer’s markets over the weekend? I went yesterday and found myself just wandering around for the longest time, finding it impossible to decide what to buy. Everything wonderful is at its peak right now but I knew if I just bought everything I wanted I wouldn’t be able to use it all. I ended up with carrots, kale, and raspberries. Maybe next week I’ll grab the peppers and zucchinis I was eyeing up.
These next two weeks are going to be very busy for me, but I’m still hoping to get some meals packed away in the freezer for when the baby comes. This week I’ll be doubling up my black bean cakes as well as the burritos. I think they should freeze well and make for super quick meals when I’m ready to use them. Here’s the plan:
Monday – Chicken Broccoli Calzones
Tuesday – Chicken and Bean Burritos
Wednesday – Angel Hair Pasta with Chile Lemon and Arugula, with lemon rosemary roasted chickpeas
Thursday – Black Bean Cakes with rice and avocado
Friday – Green Island Sandwiches with baby carrots and fresh fruit
