Welcome to the Monday Menu! This week’s menu is looking a little heavy, but I’m still in the midst of trying to freeze food for when the baby comes, and I know these are things that I will want to eat in those chilly fall months. We’re also (hopefully) moving into our new home this weekend. I’m trying to keep an open mind and let meals slide if they need to in order to get everything done that we need. Here’s the plan:
Monday – Meatball Sandwich with baby carrots
Tuesday – Slow Cooker BBQ Pork Ribs with lefse, corn, and mashed potatoes
Wednesday – Cajun Chicken Wrap with fresh fruit
Thursday – Layered Chicken and Black Bean Enchiladas with avocado slices
Friday – Baked Ziti with packaged salad
