The Monday Menu 3/4/2013

Welcome to The Monday Menu! This week’s inspiration comes from several places. I have way too many eggs in my refrigerator so I decided to try an egg bake I had seen on another blog. I’ll also be making a few things that I’ve been wanting to share with you. Hopefully I can get them made with enough light in the sky still (daylight savings next week – yay!) to take pictures. My dad also sent me a request for spanish rice so I’ll be enjoying dinner with my parents the night I make that. Here’s the full plan for the week:

Monday – Fontina and Spinach Baked Eggs with French bread
Tuesday – Enchiladas with Spanish Rice
Wednesday – Greek Mac and Cheese
Thursday – English Muffin Pizzas with fresh fruit
Friday – Brown Butter Balsamic Ravioli with packaged salad

    Oh yum. All sounds good!

    I was trying to avoid shopping this week, but I still had to grab a few fresh ingredients today. Hoping that’s it for the week.

    Monday: Tofu/Mushroom Laksa
    Tuesday: Veg Burgers and oven fries
    Wednesday: Hoppin’ John
    Thursday: white beans and tomatoes with bread crumbs
    Friday: Roasted Red Pepper & Kalamata Hummus with spinach bread stix
