The Monday Menu 10/28/2013 // A weekly meal plan from The Live-In Kitchen

Welcome to The Monday Menu! Not much is happening around here this week. We’re not huge into Halloween but will probably dress the kids up and take them around the neighborhood or to their grandparent’s house for a visit. They are dressing up as characters from their favorite cartoon, Charlie and Lola. It’s not much of a stretch as far as costumes go, but they’re really excited about it.

Jeron and I will also be attending a costume party this week, which is way outside our comfort zone. Jeron totally copped out and bought a striped shirt so he can go as Where’s Waldo. I found a few pieces at Goodwill to form a makeshift pirate costume. If you see us out and about, let’s just pretend like the whole thing never happened.

I am currently obsessed with sweet potatoes and butternut squash, two foods Jeron can’t stand. It makes things kind of difficult but he’s just going to have to put up with it because this is definitely the season to be enjoying them!

Here’s the plan for the week:

Monday – Eggplant Parmesan with spaghetti (spaghetti squash if I can find it) and salad
Tuesday – Fish Fillets with baked sweet potatoes and oven roasted broccoli
Wednesday – Italian Quinoa Casserole
Thursday – Veggie Fajitas with beans and guacamole
Friday – Caprese Grilled Cheese with fresh fruit
