Are you stuck in a heat wave this week?
I think it’s suiting for the last official week of summer to be ridiculously hot. Between the heat and the busy week I have planned i know I’m not going to want to do a lot of cooking. My chicken tacos can do double duty, serving us the first night and again on a night I know I’ll be busy baking all day. We’re also hosting the last of our summer church barbecues on Tuesday. Hopefully it will be a lot of fun and not just a sweat fest. I’ll be making my pesto tortellini salad to pass, which is one of the most popular recipes on the blog. If you haven’t tried it yet I highly recommend you give it a try as you use up your summer produce!
Jeron and I were lucky enough to have a date night last Friday, and I pulled some bruschetta inspiration off the menu of the restaurant we ate at. It’s not listed on the menu, but Jeron won’t be around for dinner all weekend so I’m looking forward to gorging myself on sweet potatoes and onions (two things he hates).
Here’s the plan:
Monday – Chicken Tacos and pico de gallo with avocado
Tuesday – Veggie Burgers and pesto tortellini salad
Wednesday – Leftover Chicken Tacos
Thursday – Walnut Pesto Bruschetta with oven roasted cherry tomatoes and edamame
Friday – Spaghetti alla Ceci with packaged salad
