Welcome to The Monday Menu! I was really hoping I wouldn’t have to write this post. Today is my due date, so I really hate the idea of planning a week’s worth of meals. I also hate the idea of having to go to the grocery store. So I’m stuck in this position of scraping by on the bare minimum with the risk of having to go to the grocery store several times this week, or facing the real possibility that I might need to make a full week of meals before this baby decides to show his or her face. This all makes planning very difficult. If it ends up I’m in the hospital for a few days (please, Lord) I don’t want food sitting around my house going bad, but its difficult to fill a week with food that won’t spoil without it being total processed garbage. Who knows how it will turn out, but here’s what I came up with:
Monday – Crispy Butternut Squash Ravioli with grilled chicken and packaged salad
Tuesday – Roast Chicken with mashed potatoes and oven roasted broccoli
Wednesday – Ground Beef Tacos
Thursday – Tomato, Onion, and Arugula Pizza
Friday – Spicy Mostaccioli
