Welcome to The Monday Menu! At 39 weeks pregnant there’s not a lot of room in my belly for food and I’ve found my appetite waning. I also feel compelled to approach each meal as my last – if I go into labor, do I really want french fries to be the last thing I ate? Probably not. So I’m struggling to find things that sound good right now. I think I’ve come to the end of my freezer cooking. I might whip up some pizza dough and throw a pan of cinnamon rolls in the freezer this week, but I’ve had enough of doubling meals or making extra ones. I’m big and tired and ready to sit down (or have a baby). Here’s the plan this week:
Monday – Fetuccini Alfredo with chicken and broccoli
Tuesday- Turkey Panini with baby carrots
Wednesday – Tostada Bar
Thursday – Green Island Sandwich with grapes
Friday – Baked Ravioli with packaged salad
