Nutella is surprisingly polarizing.
People either love it or think it tastes like plastic. And once you hear people say it tastes like plastic, you’ll probably think it tastes like plastic. Dang.
Will brown butter chocolate hazelnut pillows be polarizing? No way.
Of course I’ve always been a huge fan of the chocolate hazelnut combo on everything from toast to pretzels to just a spoon. In the last few years I’ve moved to a slightly more natural version of the spread (although I have yet to go through the process of making it myself), but whatever jar of chocolate hazelnut butter you have in your pantry will do.
Do I even need to mention browned butter? Amazing obviously, but is that trend over? Like cake pops and kale in all the things? Or do trends go on forever, becoming normalized as favorites but losing the limelight to something new? It doesn’t matter, because BROWN BUTTER!!!
I make these every time I have leftover egg roll wrappers. Of course you could buy the wrappers explicitly for this purpose, but this is really the best way I’ve found to use up the three or so sheets that are left after making some delicious homemade egg rolls. The recipe is loosey goosey, just go with it. A dab here, a sprinkle there, and in the end you’ll have a crispy wrapper filled with warm, nutty chocolate. Bathed in brown butter. Dusted in sugar. I’ll give you a minute to compose yourself.
They’re so rich that just one or two are perfectly satisfying at the end of a meal. The kids go crazy for them as well. I served them on the deck as a “thank you for playing at the water table and leaving me alone for five minutes instead of stubbing your toe and screaming like someone just murdered you” reward. And we all rejoiced.

Brown Butter Chocolate Hazelnut Pillows
- Egg roll wrappers, , cut into four equal squares
- Chocolate hazelnut butter
- 1-2 tablespoons butter
- Powdered sugar
- Lay out your egg roll wrappers on a clean work surface. Working one at a time, place about a teaspoon of chocolate hazelnut butter in the center of the square. Dip your finger in water and moisten two edges of the wrapper. Fold the other side over to create a triangle, and press the edges to seal in the chocolate. Place another dab of water in the center of the triangle and fold in the long sides to create a little pillow. Repeat with the remaining wrappers.
- In a large pan, heat butter over medium heat. As the butter melts, swirl it a bit to make sure it coats the bottom of the pan. Allow it to cook until foamy. Use a heatproof rubber spatula to push the butter around until it begins to brown and smell nutty. Add the chocolate hazelnut pillows in an even layer and allow to cook until brown and slightly crispy, 1-2 minutes. Carefully flip over and continue to cook until crispy on both sides, another minute or two.Transfer the pillows to a plate (being sure to cover them with all that good butter) and dust with powdered sugar if desired.
