Who’s ready for a fresh and easy nourish bowl that gets dinner on the table in less than 30 minutes?!
When I took my reader survey a few weeks ago you guys mentioned wanting more quick and easy meals. Today I’m excited to be partnering with several convenient, plant based brands that are almost always in my refrigerator. Let’s break down this amazingly easy bowl!
It all starts with Birds Eye Steamfresh Superfood Blends Barley & Kale. This little bag is packed with a versatile blend of beans, grains, and veggies. Frozen veggies like these make it so easy to enjoy a variety of vegetables on busy nights.
Next we’re roasting an easy-to-slice portobello mushroom in Earth Balance Original Buttery Spread while a few Gardein Seven Grain Crispy Tenders are baking alongside. Earth Balance is hands down my go-to for plant based buttery spreads, and those Gardein crispy tenders satisfy even my meat eating family with their great texture and taste.
The final piece to this very easy puzzle is a mixture of sriracha and tamari (you can totally substitute soy sauce) plus a light sprinkling of cilantro. These add another level of flavor that marries it all together in one bowl.
You can drizzle this sauce on top of the bowl, toss it in with the veggies, or place in a bowl alongside and dip your fork into it before taking bites out of the bowl.

These nourish bowls (also called buddha bowls or grain bowls) consist of grains, veggies, and lots of simple flavors, which make getting dinner on the table super easy while still being nourishing. See how that works? Nourishing = nourish. We’re winning.
This fresh and easy nourish bowl can be easily customized! Here are a few ideas to get you started:
- Roast onions alongside your mushroom, tossing with another teaspoon of the Earth Balance spread
- Add a little tahini to your sriracha/tamari mixture
- Use one of Birds Eye’s other superfood or protein blends to change up your nutrients and flavors (check out their additional blends here!)
- Wrap all the bowl fillings into a tortilla or pita for a portable version
- Chop the mushrooms and crispy tenders after baking for a completely bite sized bowl
- Add sliced mango or mandarin orange segments to get both a sweet and savory bite

Fresh and Easy Nourish Bowl
Ingredients
- 4 Gardein Seven Grain Crispy Tenders
- 1 large portobello mushroom, sliced
- 1 teaspoon Earth Balance Original Buttery Spread, melted
- 1 package Birds Eye Steamfresh Superfood Blends Barley & Kale
- 3 teaspoons sriracha
- 1 teaspoon tamari or soy sauce
- 2 teaspoons roughly chopped or torn cilantro
Instructions
- Preheat oven to 430ºF. Arrange Gardein Seven Grain Crispy Tenders on one side of a rimmed baking sheet. Arrange the sliced mushrooms on the other side. Drizzle the mushrooms with the melted Earth Balance spread and rub gently to coat. Bake 20 minutes, turning the crispy tenders once halfway through.
- When the crispy tenders and mushrooms are almost done cooking, heat the Birds Eye Steamfresh Superfood Blends Barley & Kale in the microwave according to package directions.
- In a small bowl, stir together sriracha and soy sauce to combine.
- To assemble, fill a bowl with the barley and kale mixture, then arrange the mushrooms and crispy tenders along the side. Drizzle with the sriracha mixture if desired and sprinkle with cilantro.
