Welcome to The Monday Menu! I’m finally breathing a sigh of relief with this whole wedding thing behind me. If you haven’t been around I’ve been baking around 1,200 desserts (plus a two tiered cheesecake!) for a friend’s wedding. I’ll be sharing a full overview, including recipes, with you soon. Thanks for sticking with me as I’ve been posting less in this super busy season. I’m looking forward to digging into a more structured learning environment with my kids, cleaning up the blog a bit, and baking something that I can actually eat.
As usual, inspiration for this week’s menu came from several places. I’m celebrating my new free time with a more complicated meal (the Mediterranean Macaroni and Cheese). I’m also experimenting with some vegetarian dishes and recreating a delicious meal I had while out to dinner with the bachelorette party last week.
Here’s the plan:
Monday – Orange Chick’n with brown rice and sauteed vegetables
Tuesday – Grilled pitas, hummus, carrot sticks, cucumbers, and fresh fruit
Wednesday – Enchiladas Verdes
Thursday – Grilled Polenta and Veggies with black beans
Friday – Mediterranean Macaroni and Cheese
