    No Bake Nutella Peanut Butter Pretzel Bars

    One of my all-time favorite treats are scotcheroos. My all-time favorite part of a scotcheroo is the peanut butter sugar mixture you coat the cereal in. I will burn my mouth beyond recognition stealing a bite from the pan and have been known to skimp on the cereal just to get more of that great chewy flavor.

    I wanted to see what else I could coat in this magical concoction, and I don’t think this is the last time you’ll see me playing with it. Some of my other favorite treats include peanut butter Nutella sandwiches and pretzels dipped in Nutella. I figured it would be a good idea to throw it all together and see what happened.

    What came out is a sturdy bar that is both sweet and salty and perfect with a cup of coffee. Crushed pretzels are mixed with the classic peanut butter mixture and pressed into a pan. Then they’re topped with Nutella and chopped hazelnuts.

    These bars are great as is, but I think the next time I make them I would crush the pretzels a little smaller and chop the hazelnuts more finely. The idea behind the hazelnuts is to create a sort of crumb coating to keep the bars from being too messy. If you wanted to, you could leave them off entirely and not affect the flavor of the bar all that much.

    Ingredients

    • 1 cup granulated sugar
    • 1 cup light corn syrup
    • 1 cup creamy peanut butter
    • 12 ounces pretzel sticks,, broken or lightly crushed
    • 13 ounces chocolate hazelnut spread, such as Nutella
    • 1 cup hazelnuts,, toasted, peeled, and roughly chopped

    Instructions

    • Line a 9×13 baking dish with parchment paper or aluminum foil and spray with cooking spray. Set aside.
    • In a large saucepan over medium heat, combine sugar and corn syrup. Bring to a bubble, stirring occasionally. Remove from heat and stir in peanut butter. Add pretzels and stir until thoroughly coated. Press into an even layer in the prepared pan.
    • Spread chocolate hazelnut spread evenly over the top of the peanut butter pretzels. Sprinkle with chopped hazelnuts and allow to cool.
    • Remove bars from the pan using the parchment or aluminum foil and Transfer to a cutting board and use a large knife to cut into squares.
