    Oatmeal Cookie Pancakes

    Mother’s Day is fast approaching, and if you didn’t know now you know. Let me lay it out for you. Its on Sunday, and you need to do something nice for your mom. Hopefully you know your mom well enough to know her expectations of the day. Flowers? A card? Diamonds (sorry, Mom, not this year)?

    You might want to make your mom brunch on Mother’s Day but have not a clue how to go about it. While I might suggest Blood Orange Almond Scones, Crumb Top Blueberry Muffins, or Oatmeal Chocolate Chip Cake for the one that birthed you, I’m going to instead make a case for these Oatmeal Cookie Pancakes.

    Your mom is going to love that you made her something. Its an added bonus that they taste like cookies. You know your mom loves cookies.

    Maybe you feel like you’re not much of a cook.

    Don’t worry. You’ve got this. You can do it.

    Mix together dry ingredients. Mix together wet ingredients. Throw the two together and dump it on a griddle until you have beautiful, golden pancakes.

    If you’re uncomfortable ladling pancake batter onto a hot griddle, consider mixing it up in one of those giant bowls with a handle and a spout. Your mom might already have one (take a minute to look around the kitchen) or it could make a nice gift for the occasion. You can just pour little pools of batter out onto the griddle.

    If you have any questions while baking these, just give me a call. No, I’m just kidding. I’m a mother too, and I’m totally taking the day off to drink maple syrup from the dispenser at a restaurant that’s going to make me brunch.

    Oatmeal Cookie Pancakes

    Sweet and fluffy oatmeal cookie pancakes.

    Ingredients

    • ¾ cup all-purpose flour
    • ⅜ cup old-fashioned oats
    • 1 tablespoon packed brown sugar
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • ⅜ teaspoon ground cinnamon
    • Freshly ground nutmeg
    • 1 large egg
    • 1 cup buttermilk
    • 1 tablespoon pure maple syrup
    • ⅛ cup (¼ stick) butter, melted and cooled plus more for the griddle

    Instructions

    • In a large bowl, whisk together flour, oats, brown sugar, baking powder, baking soda, salt, and spices. Set aside.
    • In a medium bowl, whisk together eggs, buttermilk, maple syrup and melted butter. Add the buttermilk mixture, all at once, to the flour mixture and fold together with a spatula until all of the flour is incorporated. Let stand for 5 minutes.
    • Heat griddle over medium heat and add a touch of butter to melt. Spoon or pour batter onto the hot griddle. Heat until the bottom is browned and the top is bubbly. Flip and cook through, about 2 minutes on each side. Serve immediately with pure maple syrup.
