    Pesto Chicken Pizza

    A few years ago my husband and I decided that if we were both going to be home all the time we needed to make some choices about how we were going to take care of ourselves. I stay home with our kids and he started a business that allows him to work from an office in our basement. Its way too easy to let yourself go without a shower or a meal or a clean pair of clothes when you’re not going to see anyone all day. With both of us being home, however, we were not only seeing just one person all day, we were seeing the most important person in the world to us all day.

    There are lots of stay at home moms who will put on make up to go to the grocery store but won’t bother if their husband is coming home. I think its important to show your husband that you care about him by taking care of your appearance. Your children will also learn where your heart lies when you take the time to do your hair the way your husband prefers or put on a dress he likes.

    Pesto Chicken Pizza

    Did you know it takes the same amount of energy to put on a nice pair of jeans as it does a shabby pair of sweatpants? Most people at Walmart don’t know. There should probably be signs or brochures.

    I’m not seeking to offend anyone. I know you didn’t sleep last night and you’re getting spit up on and peed on all day long. I just figure if you’re going to have to wash your shirt anyways, why not look good and feel good about yourself in the meantime? Its amazing what a little make up and a nice outfit can do for your outlook on the day. You don’t need to feel like “just a mom” as you do the dishes, you can feel like a woman too.

    This pizza is a pair of jeans in a sweatpants world. Its pepperoni pizza’s classy older sister. You can get creative and add thinly sliced red onion, roasted red peppers, or replace the mozzarella with feta cheese. If you use a store bought pizza dough and a rotisserie chicken it will take just minutes to prepare and seconds to disappear.

    Ingredients

    • 1 pound whole wheat pizza dough
    • 2-3 tablespoons pesto
    • 1 boneless, skinless chicken breast,, cooked and chopped
    • 1 cup mozzarella cheese

    Instructions

    • Preheat the oven to 450ºF. Brush a baking sheet with olive oil.
    • On a lightly floured surface, roll or stretch dough to desired size. Transfer to prepared baking sheet. Spread pesto evenly over dough, leaving about one inch for the crust. Sprinkle chicken evenly over the dough and top with the cheese.
    • Bake 15-20 minutes or until the dough is crisp and the cheese is melted and just beginning to brown.

      I so get what you mean; I went through a long period of unemployment, and my husband works from home as well and that was a trap I fell in to pretty easily but when I decided to start taking more care to my appearance, I realized what a boost it was to everything about that day. It stuns me senseless when I see what people wear out in public. I’m just dumbfounded sometimes.
