tree branch with snow on it

Happy Sunday! Life has been busy as always, but it has also been full of good things. I think I get more and more seasonally affected as I get older. I can’t believe how happy spring weather is making me!

Being able to get out into the woods in a t-shirt and feel the warm sun has been so powerful. We did have a pretty crazy snow storm this week, but a couple days of 60 degree weather was all I needed to get through it with a good attitude.

Yesterday was Casper’s eight birthday. I started this blog when he was less than a year old, so his age always tends to show me how far things have come.

I realized I also never gave an update on our dairy free experiment. As it turns out Cas feels much better when he’s not eating dairy, so we’ve been trying to accommodate that lately. I was able to make him a dairy free cake and find foods that he would still enjoy, so I think it was a good birthday overall.

Here’s what else has been on my mind lately:

    1. Pesto class

I taught a class this last week at my local food co-op all about pesto! It is always fun meeting new people and getting to talk about things I’m passionate about.

The students made some amazing pesto and I seriously applaud them for leaving the house in the middle of thundersnow. If you’re local, let me know what kinds of classes you might like to see in the future and I’ll try make it work!

    2. Backyard drink inspiration

    Jalapeno Mango Margarita

    Single Serving Lemonade

    Coconut Pineapple Rum Drink

    Peach Bourbon Smash

    3. Springtime fashion

    4. Farmer’s market prep

Dreaming about springtime produce? Here are a few ideas to get in the mood:

Vegetable Frittata with Balsamic Burst Tomatoes

Broccoli, Cheddar, and Sweet Potato Casserole

    Gloriously Healthy Green Salad

Vegetarian Chorizo Nachos with Lime Crema

Angel Hair Pasta with Lemony Pistachios and Arugula

    Radish Salsa

    5. On my Amazon wishlist

New grill plates for my Cuisinart Griddler – mine are getting a little grungy!

Vegan BBQ Cookbook – Every recipe in here looks unbelievable! Bonus – this book is FREE right now if you have Kindle Unlimited!

Safety Grater – Because I want to put brownies on it like all the cool baking bloggers

Plants – I kind of want to be a plant person? I’m afraid I’m going to kill them all

Hiking Backpack – I also think I want to be a long distance hiking person??! I don’t know how to fit this into my lifestyle, but it probably starts with a backpack and some day hikes. Currently obsessed with following Nicole Antoinette and trail buddy Gent on their PCT hike!

    6. TV time

I finished the second season of The OA and it was… weird. But good? I think. For the most part I knew what was in Hap’s locked room, but wasn’t disappointed by it. Overall I like a good mystery and that show is certainly full of them.

Also – Game of Thrones is back tonight! Obviously I’ve been looking forward to this. Let me know if you’ll be making any of my Game of Thrones food, I still have one or two to share with you in the coming weeks.

    John Snow Peas

    Hot Pie’s Hand Pies

    Bran Granola

    Brienne of Tart
