Some days can just get out of control.

The kids woke up an hour early, meaning you didn’t get to work out or take a shower or get anywhere near enough sleep.

Your two year old wet her pants for the third time today.

You forgot to run the dishwasher last night, so now you have no baby-sized spoons, no bowls to eat breakfast out of, and your child’s very special I-must-drink-milk-out-of-this-cup cup is too dirty to drink milk out of.

Don’t add dinner stress to this mess. Just get things started and let your slow cooker do the rest.

Do you call it a slow cooker or a crock pot? Is it regional? I don’t know. I use the two interchangeably.

Anyways, this recipe couldn’t be easier. Actually it could. You could totally skip the broiling step and just throw the raw ribs in the crock pot. The end product will be a little greasier but still delicious.

This is a great, stress-free way to get a hot meal on the table at the end of your out of control day. Add some mashed potatoes and cornbread and you have an all-out comfort meal. Check back next week when I’ll share with you a great way to use up the leftovers!

    Ingredients

    • 8 bone-in country style pork ribs
    • 1 bottle barbecue sauce
    • Salt and freshly ground black pepper

    Instructions

    • Place ribs in a single layer on a large baking sheet. Season generously with salt and pepper. Broil on high, about 4 inches from the coils, until browned, about 15 minutes. Remove from the oven, flip the ribs over, and season the other side with salt and pepper. Return to the broiler for another 15 minutes or until fat is rendered and ribs are browned. Move the ribs to the bowl of a crock pot and cover with the barbecue sauce. Set the lid in place and cook, undisturbed, on low approximately 4 hours. Keep the ribs whole or shred off the bone, moistening with the crock pot juices as necessary.. Serve alongside mashed potatoes and cornbread or use as a filling for sandwiches.

I call it crock pot. Crock Pot is a brand name, slow cooker is what it is. =)
