Welcome to The Monday Menu! I’ve been getting the question a lot lately of “How do you find time to cook?” Let me tell you, there needs to be a decision and commitment to home cooking. Every night I get within about two hours of dinner and I think its just not gonna happen. I have a baby who needs to nurse, a busy toddler, and a whiny preschooler. It would be much (much!) easier to pick up the phone and have something delivered (although they don’t really let me talk on the phone either…). Still I stick with it and barrel through, taking breaks when needed to care for someone’s needs or turning up some music to drown out the screaming. At the end of the day I know we all feel better and are healthier for sticking with it and having a well balanced meal.
I stuck with a few old standbys this week as well as trying some new things. If you’re unfamiliar with Shakshuka, it is eggs poached in tomato sauce. I got the recipe out of food bloggers Lindsay Landis and Taylor Hackbarth of Love & Olive Oil‘s new cookbook, Breakfast for Dinner. It is one of the most beautiful cookbooks I’ve ever owned and can’t wait to share a review of it with you some time in the next week or two. Here’s the plan for this week:
Monday – Baked Polenta with Tomato and Basil with oven roasted broccoli
Tuesday – Shakshuka with whole wheat baguette
Wednesday – Grilled Burritos
Thursday – Penne alla Vecchia Bettola with chopped salad
Friday – Pesto White Bean Stromboli
