Welcome to The Monday Menu! I’m working on a tight budget this week, so you’ll get a chance to see what kinds of things we eat while trying to keep costs low.
I started by looking through my refrigerator and pantry to see what I could use up, then moved to the online ad for my grocery store. Based on these two tactics I think I’m going to be able to keep my food costs to a minimum this week.
I try to make a priority for fresh fruits and vegetables even though they can drive the overall cost up. Also, I believe in quality, healthy ingredients as opposed to processed, packaged foods. That’s not to say that I don’t make some shortcuts, but I’m trying to keep the majority of the food we keep around the house real and healthy.
Here’s what I have planned:
Monday – Baked chicken with baked potatoes and roasted asparagus
Tuesday – Spaghetti aglio olio with roasted sweet potatoes
Wednesday – Tostada Bar
Thursday – BBQ chicken pizza with fruit
Friday – Chicken salad sandwiches with baby carrots
Saturday – Pasta lasagna
