Welcome to The Monday Menu! Let’s take a moment for real talk. I struggle every night with making dinner. By five o’clock my kids have reached their peak insanity and cannot be contained. They want to be under my feet and in my face. The thought of cooking dinner is enough to make me just want to lay down and take a nap, but it must be done. Part of my problem is I’m too ambitious. I like eating food that has taken a whirl through the food processor or slow-roasted in the oven for two hours until sweet and caramelized.
Summer is meant to be made of easy, oven-free meals. My friend Gillian, bless her heart, has been doing a series of meals you can make without turning on the oven. This is great because the other half of my run-down problem is that I don’t have the mental capacity to think up any easy, seasonal meals. I’m definitely open to suggestions if you have any ideas of things I need to eat right now. Here’s my half-hearted plan for the week:
Monday – Blueberry Pancakes and scrambled eggs
Tuesday – Veggie Burgers with fruit salad (BBQ at a friend’s house)
Wednesday – Cheesy Chicken Taquitos with creamy avocado dip
Thursday – Roasted Vegetable Mac and Cheese with packaged salad
Friday – Roasted Chickpea and Yellow Rice Burritos
