Use a small mason jar to shake up the dressing instead of whisking

Whisk all ingredients together until fully combined

Next, prepare the salad ingredients.

Sprinkle kale with salt and olive oil, then massage until dark and soft.

Cook kale, cooked quinoa, carrot, red bell pepper, and sunflower seeds in a skillet.

Add pepitas, radishes, and cilantro.

Add half the dressing and toss to combine.

Once the kale is wilted, remove the pan from the heat.

Serve topped with additional dressing, sliced avocado, and crushed red pepper flakes if desired.
