In a small bowl, toss together apple slices, 2 teaspoons brown sugar, and ⅛ teaspoon cinnamon until combined (I just used my hands). Arrange the apple slices in an even layer in an 8-12 ounce baking dish (I used a 5 inch pie pan).
In the same bowl you mixed the apples in, combine all the crisp topping ingredients using a fork or your hands.
Scatter the topping over the apples in an even layer.
Bake 35 minutes or until the apples are softened, everything is bubbly, and the topping is crisp and beginning to brown.
Let cool a few minutes before enjoying, and top with a scoop of vanilla or caramel ice cream if desired.
