This scrambled egg sandwich has the basic egg and cheese bagel, with the addition of avocado and everything bagel spice!

Ingredients

bagel
preferably high quality everything flavor
1
tablespoon
butter
1
slice
cojack cheese
or your favorite cheese
½
avocado
2
eggs
¼
cup
torn spinach leaves
Coarse kosher salt & freshly ground black pepper
1
teaspoon
olive oil
½
teaspoon
sriracha
or to taste
Instructions
Toast the bagel until crisp and golden brown on the outside.
Spread butter on both halves of the toasted bagel. You can use more or less depending on your tastes and preferences.
Lay the slice of cheese on the bottom half of the bagel.
Mash the avocado onto the cheese and sprinkle lightly with salt.
In a small bowl, whisk together eggs, spinach, and salt and pepper to taste.
Heat olive oil in a small nonstick skillet over medium heat.
Add the eggs and stir with a flexible rubber spatula, turning the eggs over and breaking them up if desired, just until set.
Transfer the eggs to the bagel, drizzle with sriracha, and top with the other half of the bagel.

Tips for customizing your scrambled egg sandwich
Add a slice of tomato or a spoonful of chopped sun-dried tomatoes
Swap the everything bagel for your other favorite savory flavor
If you only have plain bagels, add everything bagel spice to your eggs before cooking
Skip the bagel and serve it in a big croissant or two slices of sourdough toast
Scramble more or less eggs depending on how hungry you are
Meat eaters can add cooked bacon or a sausage patty
