Coarse kosher salt and freshly cracked black pepper
1medium yellow oniondiced
1small red bell pepperseeds and ribs removed, diced
Preheat air fryer to 390ºF.
In a large bowl, combine potatoes, olive oil, garlic powder, paprika, salt, and pepper.
Add potatoes to the air fryer and spread out evenly. Cook 10 minutes, stirring once half way through.
Add the onions and peppers to the air fryer, stir, and spread out into an even layer. Lower the air fryer temperature to 340ºF and cook another 10-15 minutes, or until brown and crisp, stirring once or twice.
Taste and add more salt if needed, and serve.
Tips for customizing
Swap the yellow potatoes for red or russet potatoes
Skip the onions and peppers, or use a different colored bell pepper and red onion
Top with a sprinkling of chopped parsley or chives
