Instructions
Remove feta from the brine and add to the bowl of a food processor. Add the yogurt, 1 tablespoon olive oil, and garlic. Season to taste with salt and pepper.
Close the lid and run the food processor for a few minutes until smooth, creamy, and a light and fluffy texture. If it is too thick, add the extra tablespoon of olive oil.
Taste and adjust the salt and pepper if needed.
Transfer to a bowl, smoothing out the top and creating an indentation in the middle. Drizzle with olive oil or honey, then top with chopped pistachios, dill, and parsley.
