How to Make a Flax Egg

I want to share with you a super easy vegan baking basic. I think of flaxseed meal as a basic pantry staple because it can be sprinkled into just about anything to add a little extra nutrition, and it can give you eggs for baking when you don't have any on hand!

What is a flax egg?

A flax egg is a gel-like combination of flaxseed meal and water. It can be used as a vegan substitute in place of eggs in many different recipes such as baked goods and veggie burgers.

  • Flaxseed Meal
  • Water

How to make a flaxseed egg

Combine 1 tablespoon of flaxseed meal with 2.5 tablespoons of cold water. Stir and refrigerate for 5-15 minutes until it has thickened.

How to use a flax egg

Use your flax egg as a 1:1 substitute for eggs to make egg free or vegan baked goods, or anywhere that calls for egg as a binder. Flax eggs cannot replace eggs in something like scrambled eggs.

If your recipe calls for more than one egg, simply double this recipe or multiply as needed for the same result.

Where to buy flaxseed meal

I purchase my flaxseed meal in the natural foods section of my grocery store near the flour and other baking supplies. You could also purchase it online from a retailer like Amazon (affiliate link) or Thrive Market.

What if I only have whole flaxseeds?

The flaxseeds need to be ground in order for your flax egg to work. If you only have whole flaxseeds, you can grind them in a clean coffee grinder (I have this one!) or small food processor until powdery. Proceed as directed.

Ingredients

  • 1 tablespoon flaxseed meal
  • 2.5 tablespoons water

Instructions

  • In a small bowl, stir together flaxseed meal and water to combine. Refrigerate and let rest 5-15 minutes until thickened. Use in place of one egg in baking or as a binding agent in recipes like veggie burgers.

Notes

If your recipe calls for more than one egg, you can double this recipe as needed.
