    Peach, Arugula, and Goat Cheese Sandwich

    A peach and goat cheese sandwich is about to make you the envy of the break room.

    People used to tease me about the over-the-top sandwiches I would bring to work but let me tell you, a fancy sandwich to look forward to in the middle of the day can make all the difference in your day-to-day attitude! 

    This sandwich has

    • Toasty whole grain bread
    • Creamy goat cheese
    • DOLE® Fridge Packs Peach Slices
    • Peppery arugula
    • Sweet honey

    I love how simple this sandwich is while still feeling special. It’s even something you could put together in the break room if you don’t get a chance before you leave the house.

    I like to toast the bread to create a little contrast between that and the soft filling. If for some reason you can’t toast the bread, don’t worry! The sandwich will still turn out fine.

    After toasting the bread, we’re spreading it with soft and tangy goat cheese. Next comes peaches! Peach season is over in the blink of an eye, so I’m excited that DOLE has come out with their new Fridge Packs. They are always in season and perfectly ripe!

    One of the nice things about the DOLE Fridge Packs is that, if you don’t use all the peach slices at once, you can pop the lid back on and keep the stackable container in the refrigerator until you’re ready to use the rest. I also love that they’re packed in all-natural fruit juice, so all you taste is the sweet fruit.

    DOLE Fridge Pack Peach Slices are ready for you to add to all your favorite recipes but for this one, it’s up to you whether or not to slice them a little thinner. I left them whole but if you want a thinner sandwich, just slice them in half lengthwise. 

    You can find DOLE Fridge Packs in four varieties: peach slices in fruit juice, pineapple chunks in 100% pineapple juice, mandarin orange in fruit juice, and mixed fruit in fruit juice near the canned fruit at your local grocery store.

    After adding the peaches, we’re drizzling this baby in raw honey and topping with a handful of arugula. Finish it off with the last piece of bread and you’re ready to enjoy your sandwich!

    This peach, arugula, and goat cheese sandwich can be customized! Here are a few ideas to get you started:

    • Add a sprinkling of chopped pistachios or almonds
    • Sprinkle the goat cheese with a bit of cinnamon
    • Drizzle the goat cheese with a little balsamic vinegar or glaze
    • Swap the goat cheese for brie or a dairy-free cream cheese spread

    Peach, Arugula, and Goat Cheese Sandwich

    Goat cheese is spread onto toasted bread, then topped with juicy peaches, honey, and arugula for a simple vegetarian sandwich that comes together in minutes!

    Ingredients

    • 4 slices whole grain bread, toasted
    • 4 ounces goat cheese
    • 8 peach slices from Dole® Fridge Packs, Peach Slices
    • 1 tablespoon raw honey
    • 1 cup arugula

    Instructions

    • Spread one slice of bread with half the goat cheese.
    • Add four peaches and drizzle with half the honey.
    • Top with half the arugula and another slice of bread.
    • Repeat with the remaining ingredients.
