Avocado grilled cheese is a tasty twist on the classic grilled cheese sandwich. I like to spice mine up with hot giardiniera, but there are so many ways to customize this easy vegetarian sandwich!

Grilled cheese is a classic staple for vegetarians everywhere.
It can get a little boring though, so I like to find ways to change up the flavors, textures, and nutrients. This time I'm adding my all-time favorite food - avocado!
This makes it more of an adult grilled cheese, although I think kids will love it too. If you want to hide the avocado a little more, consider mixing it with the shredded cheese.
Is avocado good on a grilled cheese sandwich?
Yes, avocado is a great addition to a grilled cheese sandwich! It does make it pretty rich, so I like to add a spicy element to help cut through all that fat. There are lots of ways you could do this (check the customization options below), but I chose giardiniera.
Ingredients
- Sourdough bread
- Avocado
- Gruyère cheese
- Cheddar cheese
- Hot giardiniera or hot sauce
- Butter

How to make avocado grilled cheese
- Butter one side of one slice of bread and place it butter side down in a hot skillet. Top the bread with half the cheese, the sliced avocado, giardiniera, and the remaining cheese. Butter one side of the remaining slice of bread and place it on top with the butter facing up.
- Heat until golden brown on the bottom, then flip carefully and cook the other side until golden brown.
- Let the sandwich rest for a minute before cutting it in half and enjoying it.

Use a high quality bread
I love sourdough for grilled cheese sandwiches, but any sturdy, thick cut bread will do.
How to ripen avocados
I have a post all about how to ripen avocados, so head there to learn everything you need to know. The quick version is that I like to buy avocados when they're hard, then place them in a paper bag with the top folded over for 3-4 days. They should feel soft when gently squeezed.

What to serve with an avocado grilled cheese sandwich
This would be great with my red wine tomato soup, soft scrambled eggs, or salad bar salad. You could also try a side like my oven roasted potato wedges, air fryer shoestring fries, or air fryer curly fries.
How to store avocado grilled cheese
This vegetarian sandwich is best enjoyed shortly after making it, but you can keep leftovers wrapped in plastic in the refrigerator for up to 2 days as long as the avocado doesn't turn brown.
Tips for customizing avocado grilled cheese
- Swap the giardiniera for hot sauce, chili crisp, or crushed red pepper flakes
- Leave out the spicy ingredients all together for a rich, cheesy sandwich
- Add your favorite cooked vegetables such as caramelized onions, roasted broccoli, or leftover fajita veggies
- Use your favorite melting cheese such as fontina, mozzarella, or havarti

FAQ
Healthy means something different for everyone, so I can't speak for you. Avocado is full of healthy fats and other nutrients, so if you're going to enjoy a grilled cheese I do think it's a healthy addition.
I'm using a mixture of gruyere and cheddar cheese, but fontina, mozzarella, provolone, havarti, or monterey jack would all be great options.
Giardiniera is a pickled vegetable mixture that comes in mild or hot. The vegetables are usually pretty small, but feel free to chop any big chunks if you want. Giardiniera can be found near the olives in the grocery store.

Avocado Grilled Cheese Sandwich
Ingredients
- 2 slices sourdough bread
- ½ avocado, sliced
- ⅓ cup shredded gruyère cheese
- ⅓ cup shredded cheddar cheese
- 1 tablespoon hot giardiniera or hot sauce
- 1 tablespoon butter
Instructions
- Heat a skillet large enough to fit one slice of bread over medium low heat.
- Butter one side of one slice of bread and place it butter side down in the hot skillet. Top the bread with half the cheese, the sliced avocado, giardiniera, and the remaining cheese. Butter one side of the remaining slice of bread and place it on top with the butter facing up.
- Heat until golden brown on the bottom, then flip carefully and cook the other side until golden brown. If it seems like the cheese isn't completely melted yet, lower the heat and continue to cook, flipping frequently, until everything is hot and melted.
- Let the sandwich rest for a minute before cutting it in half and enjoying it.
