Homemade Cashew Cookie Larabars

You only need four ingredients to make homemade cashew cookie larabars that will keep you stocked up on snacks that are gluten-free, vegan, and a fraction of the price of store bought!

Cashew cookie larabars

This recipe is a copycat of my favorite larabar flavor. It's a fast recipe to whip up on the weekend to keep you stocked up on snacks all week long.

The cost of those little bars can really add up when you buy them at the grocery store, so making them at home at least once in a while definitely makes sense. I always purchase my raw cashews from the bulk bin at my local grocery store, but you could also order online to look for a deal as well.

If you're not familiar with dates, they can usually be found in the baking aisle or stacked up near the produce. You can purchase pitted dates, but I find the flavor and texture to be much better if you pit them yourself.

Whether you purchase pitted dates or pit them yourself, if you hear a loud clacking in your food processor be sure to check for a missed pit. You definitely don't want any hiding in your treats.

Ingredients

  • Pitted dates
  • Raw cashews
  • Vanilla extract
  • Salt

How to make homemade larabars

  1. Combine all the ingredients in a food processor until finely chopped
  2. Transfer to a sheet of wax paper and press into a square
  3. Chill until firm enough to cut

As I mentioned you can enjoy these as a snack, or I also like having one for breakfast. They're sweet, chewy, and no bake, plus they hold up well on road trips, in lunch boxes, and on picnics!

They're full of nutrients and give you a great little kick of energy that will get you through that afternoon slump.

Tips for customizing

  • Mix and match your favorite nuts
  • Add a dash of cinnamon or pumpkin pie spice
  • Top finished bars with a drizzle of melted chocolate
  • They're already vegan and gluten-free!

Cashew Cookie Larabar

Cashew cookie larabars are a healthy treat made from nuts and dates!

Ingredients

  • 1 ½ cups pitted dates
  • ½ cup raw cashews
  • ¼ teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Combine all ingredients in a food processor. Process several minutes until ingredients are very finely chopped.
  • Pour out onto a large sheet of wax paper and use the paper to press it firmly into a large square.
  • Cut into the desired number of squares. Eat immediately or wrap in the wax paper and refrigerate.

    Not to be dense or anything, but why do you list 1 cup pitted dates then 1/2 cup pitted dates, when the whole works goes in the food processor at once?
    Second question do you have a recipe for (or can this recipe be adapted for) the Lemon Larabar?

      Great question! The old recipe card (which is what I put the recipe information into so Google can read it) I was using couldn't handle a number that wasn't a whole. However the one I am using now does and I have updated the card to reflect that, thank you! I would recommend adding 1 tsp lemon zest to this to try out a lemon flavor, otherwise I have a slightly different recipe for lemon energy balls that you may want to try! https://theliveinkitchen.com/lemon-poppy-seed-protein-balls/

      Yes, these freeze great! They'll last in the refrigerator for up to 7 days or in the freezer for up to 3 months.
