Store bought dressings and vinaigrettes are convenient, but there's just something better about homemade dressing.
You can control all the ingredients, tweaking it to your preference with very little effort. This particular dressing makes use of an often discarded leftover - the oil in a jar of sun dried tomatoes.
I've been making my egg sandwich recipe from Fast, Fresh, and Meat Free pretty frequently, which leaves me with a lot of sun dried tomato oil. This is the perfect way to reduce waste and get one more meal out of that jar.

Ingredients
- Oil from the jar of sun dried tomatoes
- Lemon juice
- Apple cider vinegar
- Raw honey
- Coarse kosher salt and freshly ground black pepper
- Crushed red pepper flakes

How to make sun dried tomato dressing
- Add oil, lemon juice, apple cider vinegar, and honey to an 8 ounce mason jar. Season with salt, pepper, and crushed red pepper flakes to taste.
- Seal the lid and shake the jar until everything has emulsified and there are no longer globs of honey sticking to the bottom.
- Taste and adjust the seasoning if necessary.

I love using a little mason jar to shake up the dressing ingredients. You won't have to clean a whisk and it's ready in seconds. These 8 ounce jars are just the right size.

How to store sun dried tomato vinaigrette
Keep leftovers in an airtight container (I use the mason jar I used to shake it up) for up to 1 week (3 days if adding fresh garlic).
Tips for customizing sun dried tomato dressing
- For even more sun dried tomato flavor, add 1 tablespoon of finely chopped sun dried tomatoes
- Add more lemon, vinegar, or honey to taste
- Make it spicy by increasing the crushed red pepper flakes
- Give it more Italian flavor by adding ½ teaspoon of Italian herb blend seasoning
- Add 1 clove of garlic, pressed or minced

FAQ
Weirdly, my grocery store keeps the sun dried tomatoes in the produce section, but you may also find them near the canned tomatoes and pizza sauce or near the roasted red peppers and olives. If you can't find them just ask a store worker who will be able to direct you to the exact location.
If your jar of sun dried tomatoes doesn't give you 5 tablespoons of oil, you can use olive oil for the rest.
No, please do not use apple cider in place of the apple cider vinegar in this recipe. They are not interchangeable.
Yes, you can use any kind of honey in this recipe, raw local honey is just my preference. Keep in mind that different types of honey and honey from different locations will taste different, so this will affect the final taste of your vinaigrette.
