I wanted to make something similar but with a little bit of a different flavor profile. Ginger pairs so well with tahini that they seemed like the perfect match.
What I came up with will definitely be a staple in my kitchen from now on. It brings together flavors like lemon, maple, and sesame, and is great on crunchy salads, leafy greens, or roasted veggies. It’s kind of an all purpose dressing you’re going to want to try on everything!

- Lemon juice
- Cold water
- Grated ginger
- Pure maple syrup
- Garlic
- Kosher salt and black pepper

Where to find tahini
Tahini can be found in the natural and organic aisle near the other seed and nut butters. You may also be able to find it near the regular nut butters, or in the international foods aisle of the grocery store.
If you live in an area without a great grocery store, you may want to order tahini online (affiliate link).
How to prepare fresh ginger
Fresh ginger is sold in knobs in the produce section of the grocery store. I keep mine stored in the refrigerator to extend the shelf life.
When ready to use, peel the skin away from the ginger using a cereal spoon. You can then grate it using a microplane, or finely mince it with a chef’s knife.


How to store tahini dressing
Store your dressing in a sealed container (I like these little mason jars) in the refrigerator for up to 3 days.
Ways to use tahini salad dressing
- Use as dressing on my best vegan salad or high protein vegan salad
- Swap for the dressing in my cilantro broccoli slaw or rainbow quinoa salad
- Serve as a dip for air fryer tofu or a crudite platter
- Drizzle over oven roasted vegetables, a roasted sweet potato bulgur bowl, Mediterranean Buddha bowl, or vegan stuffed sweet potatoes
Tips for customizing ginger dressing
- Use store bought ginger paste in place of the fresh ginger
- Add more or less water to get your preferred consistency
- Add 1 teaspoon yellow or white miso
- Make it spicy by adding sriracha to taste

Tahini is a condiment made from ground sesame seeds. It is often used in Middle Eastern cuisine and makes a great base for hummus, salad dressings, and more.
If you find the dressing too bitter for your taste, simply add more maple syrup a little at a time to balance it out. You could also try adding a little more salt.

Ingredients
- 2 tablespoons tahini
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon cold water
- 1 teaspoon grated ginger
- 1 teaspoon pure maple syrup
- 1 clove garlic, pressed or minced
- Coarse kosher salt and freshly ground black pepper

I made this tonight. I added more lemon juice instead of water for the consistency for me. I also added a tablespoon of balsamic vinaigrette. I cannot wait to make this again. Perfect dressing for my power bowls.
