Chewy Peanut Butter Bites

Chewy Peanut Butter Bites are a super simple wholesome snack that everyone will enjoy! Only 4 ingredients and 15 minutes to make.

It's a little hard to describe exactly what this family favorite is.

Is it granola? Kind of. Is it a cookie? I guess you could call it that. Is it one of the best things in the world? Abso-freaking-lutely.

These chewy peanut butter bites are simple to make and disappear fast. I've been doubling the recipe lately because we go through it so quickly.

They're not too different from my healthy peanut butter breakfast bars, but they're faster to make and don't contain pieces of nuts or seeds. They're also a little less sticky, even though my kids like to call this Sticky Snack.

Speaking of kids, this is a great healthy snack for children and adults of all ages. It's softer than granola, which makes it perfect for small children (just make sure they're ready for peanuts and honey). 

I usually make a big batch of this whenever we're traveling to have in the car, on the plane, and in any situation where they might need a snack on the go. It stays good for a long time unrefrigerated and provides a boost of energy from the combination of protein, carbohydrates, and sugar.

  • Honey
  • Vanilla Extract
  • Old fashioned oats

How to make chewy peanut butter bites

  1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper or a Silpat.
  2. In a large glass measuring cup, combine the peanut butter, honey, and vanilla extract.
  3. In a large bowl, use a large rubber spatula or wooden spoon to combine the oats and peanut butter mixture until completely incorporated.
  4. Spread the mixture onto the prepared baking sheet. The less you spread it out, the more sticky it will be. I like to do an even layer that covers most of the sheet. Bake for 8 minutes and let cool completely on the baking sheet before breaking into clumps and storing in an airtight container.

Top tips

Natural peanut butter vs regular

I use natural peanut butter (I like the Smucker's brand) for most of my recipes. If you also choose this, you'll want to make sure you stir it well to avoid any oil separation.

Regular peanut butter (JIF (affiliate link), Skippy, etc.) is ok to use, but will yield a very different taste and texture to the final product. If using regular peanut butter, you may want to experiment with using less honey.

How to stir stiff peanut butter

If your natural peanut butter is too stiff to stir and measure, try removing the cap and microwaving for 15-30 seconds. This is usually enough to loosen it up so you can mix it with the honey and other ingredients.

How to store

This can be stored in an airtight container at room temperature for up to 2 weeks, but I recommend keeping it in the refrigerator since it will stay fresher and not get as sticky. You can also store it in the freezer for up to 3 months.

Tips for customizing chewy peanut butter bites

  • Add a handful of mini or full size chocolate chips after baking and cooling
  • Use sunbutter, almond butter, or cashew butter in place of the peanut butter
  • Use gluten-free oats to make this gluten-free
  • Add chopped nuts, chia seeds, or pepitas similar to my peanut butter breakfast bars
  • Use chunky peanut butter

FAQ

Is this an energy ball recipe?

Technically this could be considered an energy ball since it has a lot of the same ingredients, however we're turning them into poppable oatmeal bites.

Is this peanut butter honey granola?

Yes, this is a type of peanut butter granola. Most granolas contain more fat and come out crisp. This recipe is very soft, but it still tastes great on yogurt.
