Chocolate covered banana bread bites are a fun way to take banana bread to the next level! Use your favorite banana bread recipe to make this bite sized snack.

Banana bread is great, but how can we make it even better? Let's cover it in chocolate!

These banana bread bites are a simple way to use up leftover banana bread (or a great excuse to make it in the first place!) and make the perfect one or two bite snack.

Ingredients

  • Banana bread
  • Bittersweet chocolate
  • Coconut oil

Instructions

  1. Line a plate or baking sheet with parchment paper. Place banana bread chunks on the parchment paper and place in the freezer while you prepare the chocolate.
  2. In a microwave or double boiler, melt chocolate and coconut oil together.
  3. Remove banana bread chunks from the freezer and dip into the chocolate using a fork or other dipping tool. Turn the bread to coat completely in chocolate and return to the parchment lined sheet. Place the sheet in the refrigerator or freezer until the chocolate is set.

When chocolate is the star of the show like this, its best to use good quality chocolate. You might be surprised how much this will affect both the taste and the texture.

How to cut banana bread for a bite sized snack

Make sure your banana bread is fully cooled before cutting. This recipe is a great way to use up leftover banana bread that has been around for a few days and may be starting to dry out.

Start by cutting thick slices with a serrated knife. Then, cut each slice into strips, and finally into squares. Of course, you can change this to suit your needs (leaving them as sticks and only dipping them in chocolate halfway would look pretty!).

Can I use semisweet chocolate instead?

Yes, you can swap the bittersweet chocolate for semisweet, milk, or even white chocolate!

Is it ok to skip the coconut oil?

Yes, you can skip the coconut oil and just use chocolate if you prefer. The coconut oil helps give it a smooth, shiny finish.

  • 2 slices (¼ loaf) banana bread,, cut into thirds
  • 4 ounces bittersweet chocolate
  • 1 teaspoon coconut oil

Instructions

  • Line a plate or baking sheet with parchment paper. Place banana bread chunks on the parchment paper and place in the freezer while you prepare the chocolate.
  • In a microwave or double boiler, melt chocolate and coconut oil together. Remove banana bread chunks from the freezer and dip into the chocolate using a fork or other dipping tool. Turn the bread to coat completely in chocolate and return to the parchment lined sheet. Place the sheet in the refrigerator or freezer until the chocolate is set. Transfer the chunks to an airtight container and store in the refrigerator or freezer until ready to serve, microwaving briefly if desired.
