Edible Gingerbread Cookie Dough

This gingerbread cookie dough is 100% safe to eat and tastes just like Christmas! Enjoy this single serving treat any time you want a little taste of the holidays.

Gingerbread is a classic Christmas flavor.

It's a little sweet, a little spicy, and 100% necessary for a fulfilling holiday season. Still, not everyone wants to make a pile of treats for the holiday, or maybe you want a quick little treat that's just for you. Single serving is the way to go!

This gingerbread cookie dough is one of my favorite easy Christmas treats. It comes together in just 5 minutes with ingredients you might already have on hand for your other holiday baking.

While most of my single serving dessert recipes are vegan, this one uses real butter to get that classic cookie dough flavor. You can easily substitute vegan butter if you prefer to keep it vegan, and a gluten free flour blend to make it gluten free.

Ingredients

  • Salted butter
  • Dark brown sugar
  • Molasses
  • All purpose flour
  • Cinnamon
  • Ground ginger
  • Salt

How to make edible gingerbread cookie dough

  1. In a small bowl, stir together the butter, brown sugar, and molasses. 
  2. Add the remaining ingredients and stir until fully combined.
  3. Enjoy as is, or add your favorite toppings such as sprinkles, nuts, peppermint pieces, or chocolate chips.

Top tips

How to heat treat flour

Raw flour can contain bacteria that may make you sick, so it's best to cook your flour before enjoying it. This can easily be done in the oven or microwave. For small quantities such as this recipe, I would recommend using the microwave.

To treat your flour in the microwave, place the flour in a bowl and microwave for 30 seconds. Stir and microwave for another 30 seconds, repeating these steps until the flour reaches 160ºF. Just like the oven, allow it to cool and sift before using.

To treat your flour in the oven, spread it on a parchment lined baking sheet and bake for 10 minutes at 350ºF or until it reaches 160ºF. Allow the flour to cool before sifting and using as directed.

Christmas treats for kids

One super fun option for this recipe is to set up a DIY customizable cookie dough station. This is a great activity for kids of all ages as well as adults, and might be a fun way to pass the time when you're all together around the holidays.

To set this up, gather the basic ingredients for the recipe (in whatever quantities are necessary for your group of people) as well as fun mix-ins such as sprinkles, mini chocolate chips, caramel or white chocolate chips, candied ginger, peppermint pieces, gumdrops, or anything you think sounds good with gingerbread.

Everyone can mix up their own cookie dough and add their favorite mix-ins for a totally customizable experience! Just remember, this cookie dough doesn't bake into cookies and is meant to be eaten without baking.

Elf on the Shelf Idea

This would be the perfect amount to place in a little toy bowl to make it look like the elf is mixing up some cookies! Everything in this recipe is safe to eat at room temperature, so don't worry about it sitting out for a couple hours if you have to leave it overnight.

How to store 

This is a single serving, and generally meant to be eaten right after mixing, but if you want to you can keep it covered in the refrigerator for up to 5 days. You can also freeze it for up to 3 months.

FAQ

Can I bake this cookie dough?

No, this cookie dough will not bake into a cookie. For a ginger flavored cookie, try my giant ginger cookies.

Is raw cookie dough safe to eat?

This raw cookie dough is 100% safe to eat. Please note that raw flour is not safe to eat out of the package, and must be heat treated before enjoying.

How spicy is this gingerbread cookie dough?

This cookie dough has a strong gingerbread flavor. If you prefer a more mild flavor, start with less spices and add more as needed.

Can I substitute coconut oil for the butter?

I do not recommend substituting the butter with any kind of oil, including coconut oil. I tested this and the result was very greasy.
