I love, love, love my banana bundt cake, but it takes some time and a hot oven. For those times where you want a treat NOW without heating up the house, mug cakes are the way to go!
There is an optional icing that comes together quickly with just powdered sugar and almond milk. The cake is definitely delicious enough on it’s own, but I love the extra special touch of drizzling something on top.
The cake itself is naturally sweetened, so this is definitely healthy enough to enjoy for breakfast. I love single serving treats like this because it doesn’t leave ten servings sitting around waiting to be eaten.
Even if you have several people who want one, it’s fun to let them customize it to their own liking with mix ins like nuts, chocolates, sprinkles, and more!

- Stir together dry ingredients in a small coffee mug

How to make a banana mug cake with no egg
This recipe doesn’t need an egg thanks to the addition of banana, maple syrup, and almond milk. They add plenty of moisture for the perfect mug cake texture!
Do I need a microwave to make this recipe?
I haven’t tested this recipe in the oven, but you could experiment if you’re feeling adventurous. For now I only recommend making this in the microwave.
What kind of bananas should I use to make mug cake?
I recommend using very ripe bananas to make this recipe. They’ll mash nicely so they become incorporated into the mixture and add plenty of sweetness to the cake.
What can I do with the rest of the banana?
This banana mug cake recipe uses only one tablespoon of banana, leaving plenty of banana left over for slicing and adding on top of the cooked cake, eating on its own, freezing and turning into banana ice cream, or slicing and covering in chocolate.
Is this a vegan banana mug cake recipe?
Yes, the mug cake itself is vegan. If using the icing, you’ll want to check to see if your powdered sugar is vegan since most is not.

Healthy Banana Mug Cake
- 3 tablespoons all-purpose flour
- 1 tablespoon walnuts
- ¼ teaspoon baking powder
- 1 Pinch sea salt
- 1 ½ tablespoons unsweetened vanilla almond milk
- 1 tablespoon mashed banana
- 1 tablespoon pure maple syrup
- 1 teaspoon chocolate chips, plus more for topping (optional)
Mug Cake Icing
- 2 tablespoons powdered sugar
- ¼-1 ½ teaspoons unsweetened vanilla almond milk
Instructions
Banana Mug Cake
- In a small microwave safe coffee mug, add the flour, walnuts, baking powder, and salt, stirring to combine.
- Add the almond milk, mashed banana, and maple syrup and stir again until combined.
- Sprinkle with additional chocolate chips if desired.
- Microwave 50 seconds or until it has risen and fully cooked.
Mug Cake Icing
- In a small bowl, stir or whisk together powdered sugar with ¼ teaspoon almond milk. Add almond milk a drop at a time until the desired consistency is reached. I like it a little thick but easy to drizzle.
- Drizzle cooked mug cake with icing, serve and enjoy.

this…. is amazing-
i’ve been looking for healthy low fat mug cakes with NO protein powder, and most have banana but they turn out like (bad) pudding or rubber. this one was so light and fluffy and amazing, i added cinnamon inside and used white whole wheat flour, as well as making half the glaze regular (powdered sugar and unsweetened vanilla almond milk) and half w cinnamon. AMAZING

I have not tried it in the oven, but I think it would work. I would recommend baking it at 350ºF for 8 minutes to start and check for doneness. Even if it comes out gooey, it will be safe to eat.
