You could say I'm really into cookie dough.

I've been sneaking bites out of the bowl since I was a kid. A few bites here, a few bites there, and then spread some on a finished cookie because that combo is better than the sunrise itself.

My Vegan Cookie Dough for One is the single most popular recipe on the blog, and with good reason. It tastes just like the real thing while still being free of eggs and processed sugar.

I wanted to come up with an even healthier cookie dough option, and this Vegan Peanut Butter Single Serving Cookie Dough hit the mark. It uses creamy natural peanut butter in place of oil and has that perfect cookie dough texture.

Ingredients

  • Peanut butter
  • Pure maple syrup
  • Vanilla extract
  • All-purpose flour
  • Sea salt

How to make edible peanut butter cookie dough

  • Mix peanut butter, maple syrup, and vanilla in a small bowl
  • Add flour and salt and stir to combine
  • Enjoy!

Top tips

Use natural creamy peanut butter

Try to use unsalted peanut butter that contains one ingredient: peanuts.

If you are using salted peanut butter, you might want to skip the added salt in this recipe.

Heat treat the flour

Recently there have been concerns about eating raw flour. It is generally considered unsafe to eat raw flour.

To make your flour safe to eat, toast the flour on a parchment lined baking sheet in a 350ºF oven for 5 minutes before using.

How to store edible cookie dough

Store edible peanut butter cookie dough in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.

Tips for customizing single serving cookie dough

  • Use crunchy instead of creamy peanut butter

No. It lacks the necessary ingredients for a good cookie. I have tried baking the dough into an actual cookie and it just isn't as good as the raw dough itself.

Ingredients

  • 1 tablespoon natural creamy peanut butter
  • 1 tablespoon maple syrup
  • ¼ teaspoon pure vanilla extract
  • Dash of Greek sea salt or other cooking salt
  • 2 tablespoons unbleached all-purpose flour

Instructions

  • In a small bowl, stir together peanut butter, maple syrup, vanilla, and salt.
  • Add the flour and stir until combined. Enjoy immediately or refrigerate until ready to eat.

    My daughter loves to sneak bites of cookie dough too and I am skeptical about the egg-ful cookie dough she likes to sneak bites from - so am so glad to see this!

      It's not the egg that makes it unsafe to eat.. it's the flour not being heat-treated. You risk getting e. Coli or salmonella from raw flour.

    I don't think most people are aware, but it's not always (or typically even) raw eggs people should fear when eating raw cookie dough. Uncooked flour can give you e. coli.
    I would recommend against putting flour into this!

    Just made - delish!! I cooked the flour for about 4 min on low-med heat in a skillet (as I got everything else put together and fed the ever hungry cats...), let it cool a minute then added. It’s cookie dough “fresh from the oven” - because it’s warm! Plus, lower bacteria risk, yada yada...

      I'm not super familiar with coconut flour, but since we're not actually baking the dough I think it would be ok. Try adding it a little at a time since it might not need the same amount as all-purpose.
