- Add shredded carrots and coconut oil to a microwave safe mug and microwave for 1 minute.
- Add the maple syrup and vanilla extract and mix with a spoon until combined.
- Add the remaining ingredients and stir until just combined and no lumps of flour remain.
- Microwave for 1 minute or until fully cooked.
- Meanwhile, combine cream cheese and powdered sugar in a small bowl until smooth. Drizzle over the top of the finished cake and enjoy.

Top tips
Use real maple syrup
This is not the time to pull out your sugary pancake syrup. This recipe needs pure maple syrup to work. It's the only sweetener other than the frosting, and changing it would affect both the flavor and the texture.
Whipped cream cheese
I like using whipped cream cheese as opposed to a block of cream cheese to make the frosting because it is so much easier to mix. This can usually be found in a small tub right next to the regular cream cheese at the grocery store. If you prefer a firmer frosting, feel free to use block cream cheese for this recipe.

While I think it would probably be ok to use pre-shredded carrots from the grocery store to make this cake, I recommend grating your own so you can use the finest grater possible. This will allow for a moist and fluffy cake instead of having large chunks of carrot in there.
