    Scrambled Egg Sandwich

    It doesn’t get much easier than a scrambled egg sandwich! Learn how to take it to the next level with a few simple tips to make this the most flavorful and filling bagel egg sandwich you’ve ever had.

    This egg and cheese bagel is so simple that it’s what I make myself for dinner on those nights where I just… don’t feel like making dinner. Even though it’s quick and easy, it still manages to feel fancy and special and, let me be clear, extremely filling.

    While this is technically pretty classic breakfast food, I just don’t feel hungry enough in the morning for this big sandwich. It’s great any time of day though, so don’t let any of that stop you from eating this whenever you feel like it! You will most frequently find me throwing it together at 9pm after the kids are in bed and I realize I haven’t eaten dinner yet.

    What makes this the best scrambled egg sandwich

    I really think this is as good as it gets, and can’t believe it took me so long to share this recipe with you! This is a combination of so many of my favorites:

    • Everything bagels
    • Soft scrambled eggs
    • Ripe avocado
    • Cheese!

    It’s fast, easy, filling, and of course, easily customizable. You could make one differently for everyone in your house and it would hardly take any more time than if you were making them all the same.

    Ingredients

    • Everything bagel
    • Eggs
    • Cojack cheese
    • Spinach
    • Butter
    • Olive oil
    • Avocado
    • Salt & pepper
    • Sriracha

    How to make a scrambled egg sandwich

    1. Toast and butter the bagel. 
    2. Place a slice of cheese on the bottom half.
    3. Mash half an avocado onto the cheese and sprinkle lightly with salt.
    4. In a small bowl, whisk eggs with torn spinach, salt, and pepper.
    5. Heat olive oil over medium heat. Add whisked eggs and stir with a flexible spatula until just barely cooked.
    6. Place the eggs on top of the cheese side of the bagel.
    7. Drizzle sriracha over the eggs.
    8. Place the top half of the bagel on top of the eggs and enjoy.

    Where to buy the best bagels

    You can use any bagels for this recipe, but high quality bagels will really give you the best result. I recommend buying bagels from a bakery or bagel specific store. We don’t have a lot of that where I live, so I buy mine from Panera and keep them in the freezer for whenever I get a craving for this sandwich.

    What flavor bagel to use for a bagel egg sandwich

    I think everything bagels are the best because they’re so full of flavor. Plain, asiago, or onion would also be great options, but any savory (non-sweet) bagel will work.

    What’s the best hot sauce for an egg bagel sandwich?

    I think sriracha (affiliate link) is the best choice here, but I also love green Cholula, Tapatio, and Cry Baby Craigs. You really can’t go wrong!

    How to make soft scrambled eggs

    I shared my tips for how to make perfect soft scrambled eggs last week, so make sure you check out all my tips there. Basically you want to stir your eggs and let them fully cook without overcooking them. Don’t walk away, it happens fast!

    For scrambled egg sandwiches, I like to keep the eggs big, or even fold it into more of an omelette shape to help the sandwich hold together.

    Should I slice or mash the avocado?

    This sandwich can get pretty messy, especially with the avocado coming out the sides. I’ve found it’s easier to keep the avocado in place if you mash it, rather than slice it. 

    The slices are just too smooth and can easily slip out. However, you’re welcome to do it however you prefer and it will all taste the same.

    How to store leftovers

    I’m really not a fan of leftover scrambled eggs, but if you want to save some of this you can wrap it in aluminum foil or plastic wrap and store in the refrigerator for up to 2 days. If I know I won’t be eating the whole thing sometimes I just cut the recipe in half.

    Tips for customizing your scrambled egg sandwich

    • Add a slice of tomato or a spoonful of chopped sun-dried tomatoes
    • Swap the everything bagel for your other favorite savory flavor
    • If you only have plain bagels, add everything bagel seasoning to your eggs before cooking 
    • Skip the bagel and serve it in a big croissant or two slices of sourdough toast
    • Scramble more or less eggs depending on how hungry you are
    • Meat eaters can add cooked bacon or a sausage patty
    • Swap the sriracha for your favorite hot sauce

    Scrambled Egg Sandwich

    This scrambled egg sandwich has the basic egg and cheese bagel, with the addition of avocado and everything bagel spice!

    Ingredients

    • 1 bagel, preferably high quality everything flavor
    • 1 tablespoon butter
    • 1 slice cojack cheese, or your favorite cheese
    • ½ avocado
    • 2 eggs
    • ¼ cup torn spinach leaves
    • Coarse kosher salt & freshly ground black pepper
    • 1 teaspoon olive oil
    • ½ teaspoon sriracha, or to taste

    Instructions

    • Toast the bagel until crisp and golden brown on the outside.
    • Spread butter on both halves of the toasted bagel. You can use more or less depending on your tastes and preferences.
    • Lay the slice of cheese on the bottom half of the bagel.
    • Mash the avocado onto the cheese and sprinkle lightly with salt.
    • In a small bowl, whisk together eggs, spinach, and salt and pepper to taste.
    • Heat olive oil in a small nonstick skillet over medium heat.
    • Add the eggs and stir with a flexible rubber spatula, turning the eggs over and breaking them up if desired, just until set.
    • Transfer the eggs to the bagel, drizzle with sriracha, and top with the other half of the bagel.
