I’ve been cranking out a lot of new salads this summer, and I have to say this broccoli cilantro slaw is one of the best! It is so flavorful and delightfully crunchy. I feel like I’ve been waiting ages to share it with you, so let’s get into it!
One of the best things about a crunchy slaw is that it still holds up (and maybe tastes even better) after a few days in the fridge. This is a large salad, so you’ll likely have leftovers, and that’s ok! It’ll still be crunchy after hanging out with the peanut butter dressing in the refrigerator for a day or two.

I used packaged slaw mix to keep this super simple, but you can definitely incorporate your farmer’s market finds or CSA haul into the mix. Overall you’ll need:
- Broccoli slaw
- Coleslaw mix
- Red bell pepper
- Green onions
- Cilantro
How to make peanut butter dressing
Let’s talk about that peanut butter dressing! It’s a peanut dressing that is easy to whisk together in a bowl or shake up in a little mason jar. It gets tons of flavor from peanut butter, ginger, garlic, and rice wine vinegar.
The broccoli slaw dressing is similar to what I use in my healthy green salad recipe, and it is the best way to make veggies enjoyable! If you prefer a creamier classic coleslaw, try my coleslaw without mayo!
Tips for customizing broccoli slaw with peanut dressing
- Add ½ cup cooked and cooled edamame
- Swap the peanuts/peanut butter for cashews/cashew butter
- For a nut-free version use sunflower butter and sunflower seeds
- Add other veggies you have on hand such as radishes or cucumber
- Use all freshly chopped veggies such as carrots, cabbage, and broccoli
- Top with your favorite protein such as tofu or tempeh

Cilantro Broccoli Slaw with Peanut Butter Dressing
Ingredients
Cilantro Broccoli Slaw
- 12 ounces coleslaw mix
- 12 ounces broccoli slaw mix
- ½ red bell pepper, julienned
- 2 green onions, sliced
- ½ cup cilantro, finely chopped
- Chopped Peanuts
- Black Sesame Seeds
- Sriracha
Peanut Butter Dressing
- ¼ cup rice wine vinegar
- 2 tablespoons vegetable oil
- 2 tablespoons creamy peanut butter
- 2 tablespoons low sodium soy sauce or tamari
- 1 clove garlic, pressed
- 2 teaspoons grated ginger or ginger paste
- 1-2 teaspoons raw honey
- ½ teaspoon sesame oil
- Coarse kosher salt and freshly ground black pepper
Instructions
- In a large bowl, toss together coleslaw, broccoli slaw, bell pepper, green onions, and cilantro.
- In a small bowl or mason jar, whisk or shake together the dressing ingredients until fully combined.
- Pour dressing over slaw and stir to thoroughly combine. Refrigerate ten minutes or up to overnight to allow the flavors to meld. Serve cold topped with chopped peanuts, black sesame seeds, and sriracha to taste.
