    Sooo, I’ve definitely eaten too many chocolate chunk blondies in the last 24 hours.

    There are plenty of things I could blame. My kids, for being so adorable and deserving a homemade treat while watching vintage cartoons. The other members of my church for not eating enough of them when I brought them to church on Sunday. The giant tray of cookies, brownies, and quick breads also sitting at church tempting people not to take five of those blondies. This baby in my belly for just loving chocolate sooooo much.

    Really, I’m the only one to blame. I’m the one who needs to be stopped, specifically by my husband who I requested (*gasp*!) throw the rest out. Now it’s time to turn our attention to a sandwich and a healthy snack.

    This microwave popcorn is usually our sit-in-front-of-the-tv snack. I realized I’ve been slacking on science in homeschool so we’ve been trying to watch Cosmos on Netflix once a week. The popcorn helps the kids sit and listen, since it is a pretty heavy, long show. I figure if they catch a tie bit or two of information that’s good enough at this age. It also opens up some interesting conversations like, “Doesn’t this guy know about God?!”

    I hesitate to share such an easy recipe, but really, isn’t that what we’re all after? Simple, delicious food that’s quick and easy to make. It doesn’t get much better than this homemade microwave popcorn. If you’re used to the highly processed kind you buy in the store the simplicity of this snack might be an adjustment for you. My kids have really never had the store-bought kind and will happily eat this popcorn plain from the bag, but I usually add a tablespoon or two of melted butter and a sprinkling of salt to brighten it up.

    The topping possibilities are really endless and that’s what allows you to make it your own. Try garlic powder, chili powder, cajun seasoning, M&Ms (my favorite on popcorn!), peanuts, or whatever you can imagine!

    Homemade Microwave Popcorn

    Did you know you can make microwave popcorn at home without all the chemicals? It’s true!

    Ingredients

    • ¼ cup popcorn kernels

    Instructions

    • Place popcorn kernels in a brown paper bag and fold over three times. Microwave on high for 3 minutes or until there is a few seconds between popping sounds. If the popping slows to few or no more pops, remove from the microwave so it doesn’t burn. Toss popped popcorn with your favorite topping. Some of ours include, butter, coconut oil, nutritional yeast, and/or salt.

      What a great idea! My father used to make popcorn on stovetop when I was a child (used to drive my mother crazy, he’d burn the pot down), and I always loved that simple taste that you don’t get from bought popcorn. Thanks for this idea!
