    This hummus sandwich is loaded with veggies, texture, and flavor. It’s easy to make vegan or vegetarian and is great for lunch, picnics, and more.

    This vegan veggie sandwich is easy to make because all you need to prep is a few sliced vegetables. You could slice them all up on the weekend and be ready to throw together sandwiches for work, school, or an easy weeknight dinner.

    We’re keeping this recipe filling by using my beetroot hummus as a tasty spread, but you could use any homemade or store bought hummus in it’s place. I love the bright color it adds, and the garlicky, savory flavor is unbeatable!

    You’ll find this recipe to be easily customizable, meaning you can take the recipe itself as more of a suggestion and add ingredients and quantities in a way that suits your tastes and what you have available to you. Keep this in mind when calculating nutrition facts as well.

    How to make a hummus sandwich

    1. Slice all vegetables thin.
    2. Spread a thick layer of hummus on one slice of bread. 
    3. Top with spinach, tomato, onion, carrots, radish, and avocado. 
    4. Season the top of the avocado with salt and pepper to taste.
    5. Top with microgreens and another slice of bread.

    Top tips and questions

    The best bread for a hummus sandwich

    Using the right kind of bread to build a sandwich ensures that it will hold together if you’re storing it until lunch time, and once again when you’re biting into it. No one wants a soggy sandwich!

    I highly recommend using a hearty, whole grain artisan bread for hummus sandwiches. Sourdough would be another great option. However, feel free to experiment with your favorite types of sandwich bread or rolls.

    Should I toast my bread for sandwiches?

    Yes, I recommend toasting your bread for sandwiches, especially this one. Toasting helps give the bread more structure and strength, so it can hold it’s own against moisture-rich ingredients such as tomatoes and hummus.

    The best hummus for sandwiches

    I love, love, love my beetroot hummus on sandwiches. It offers a more complex flavor and adds a little creaminess to the whole thing.

    If I were doing store bought hummus, I love Sabra hummus, both the classic as well as some of their other flavors like roasted pine nut or roasted red pepper.

    How do you make hummus?

    Hummus is easy to make at home, and allows you to adjust the flavors and texture to your liking. You can follow my recipes for basic hummus and beetroot hummus to try this yourself.

    What are microgreens?

    Microgreens are seedlings that can be taken from a variety of vegetables. I usually use radish microgreens because of their smaller size, but you can use any variety that is available to you. I can usually find them at the grocery store and farmer’s market.

    How to slice vegetables thin

    I’m pretty picky about the cut of my vegetables, because I think a section of thinly sliced vegetables just feels and tastes better than thick cut vegetables. I have several tools that I use regularly to help me cut my vegetables.

    First is this vegetable peeler (affiliate link), which can also julienne vegetables for recipes like this warm kale salad. I use this to make long, flat carrot ribbons.

    I also use a mandolin slicer to cut my radishes thin. This tool is easier to use on the small, round vegetables than the peeler would be.

    You could probably use the mandolin for the onion also, but I like to use a regular chef’s knife for that since it ends up being a pretty small job. I also use a knife to slice my avocado and tomato. If you’re having trouble cutting your tomato with a chef’s knife, consider having it sharpened or switch to a slightly serrated knife instead.

    Tips for customizing your vegan hummus sandwich

    • Swap the beetroot hummus for basic hummus or your favorite store bought flavor of hummus
    • Add cheese such as feta, provolone, or cheddar to make a vegetarian hummus sandwich
    • Swap the vegetables for whatever you have on hand such as bell peppers or cucumbers
    • Add a sprinkle of crushed red pepper flakes for some heat
    • Change out the bread for a hoagie roll, french bread, or hard roll
    • Throw in some giardiniera or other pickled vegetables

    Ingredients

    • 2 slices whole grain, artisan bread
    • ¼ cup beetroot hummus
    • ¼ cup baby spinach
    • ½ to mato, sliced
    • 2 tablespoons thinly sliced red onion
    • ½ large carrot, thinly sliced into ribbons
    • 1 radish, thinly sliced
    • ½ avocado, thinly sliced
    • Coarse kosher salt & freshly ground black pepper
    • ⅓ cup microgreens

    Instructions

    • Spread a thick layer of hummus on one slice of bread.
