Cookie Mug Cake

This chocolate chip cookie mug cake requires no egg and is ready in just minutes! It's gooey, naturally sweetened, and full of chocolate. Make this single serving dessert any time you're craving something sweet.

My love for single serving desserts is always expanding. After much testing, this chocolate chip cookie in a mug might be my new favorite!

Made with just 6 simple ingredients, this dessert is naturally sweetened with maple syrup and so easy to make vegan by swapping in vegan chocolate chips. It's very similar to my vegan mug brownie, but a vanilla rather than chocolate flavor.

Ingredients

  • Pure maple syrup
  • Coconut oil
  • Vanilla extract
  • All purpose flour
  • Flaky sea salt
  • Chocolate Chips

How to make a cookie in a mug

  • In a mug, combine maple syrup, coconut oil, and vanilla extract.
  • Add flour and ¼ teaspoon salt. Stir until all the flour is incorporated.
  • Stir in the chocolate chips.
  • Microwave for 55 seconds or until the cookie is baked through. Don't overbake it or it will become hard. Allow to cool for 1 minutes before enjoying.

Top tips

Use real maple syrup

Sugary pancake syrup will not work or taste great in this recipe. I recommend using 100% pure maple syrup instead.

Measure and stir well

With small desserts, even the slightest oversight can leave you with a very different result. Make sure you're measuring carefully and stir completely before baking. The microwave is kind of unforgiving if you have flour that didn't get mixed in properly.

How to store a mug cookie

This mug cookie is best eaten shortly after baking. If it sits around for a long time it will go from gooey to hard. If this doesn't bother you, you can store it covered at room temperature for up to 1 day.

Tips for customizing a microwave mug cookie

  • Instead of chocolate chips, try your favorite sprinkles
  • Add 1 tablespoon of chopped walnuts or pecans
  • Microwave it for a few seconds less to make it extra gooey
  • Top with a dollop of your favorite frosting
  • Use vegan chocolate chips to make it vegan
  • Use a gluten free flour blend to make it gluten free

FAQ

How do you measure coconut oil?

Coconut oil is kind of unique because it is a solid while cold and a liquid when warm. I always recommend measuring your coconut oil when it is solid, then melting it if needed. Simply pack your measuring utensil with coconut oil and smooth out the top either against the side of the jar or with a butter knife.

Is this a mug cookie or a mug cake?

Technically this is a mug cookie, but I called it a cookie mug cake because that is what people are usually looking for. It's common to call something baked in a mug in the microwave a "mug cake".
