Coconut oil in cookie dough?
Coconut oil (affiliate link) is magic. It melts in your mouth and doesn’t taste too terribly coconut-y. The temperature of the oil makes a big difference on the consistency here.
My house is pretty cold in this polar vortex, so after some good ol’ stirring it was perfect for me. If it comes out too runny for you just pop it in the fridge for a few minutes and it’ll firm right up.

Does this vegan cookie dough taste like maple syrup?
Coconut oil and maple syrup are strong flavors, but I find they cancel each other out in this recipe. If you measure carefully it shouldn’t taste too much like coconut or maple, although you might still taste it a tiny bit.
Is it bad to eat raw flour?
Recently there have been concerns about eating raw flour. It is generally considered unsafe to eat raw flour.
To make your flour safe to eat, toast the flour on a baking sheet in a 350ºF oven for 5 minutes before using.
How do you make cookie dough safe to eat?

Can I bake edible cookie dough?

Vegan Cookie Dough for One
Ingredients
- 1 Tablespoon coconut oil, melted
- 1 Tablespoon real maple syrup
- ¼ teaspoon pure vanilla extract
- 3 Tablespoons all-purpose flour, *
- Pinch of salt
- 1 teaspoon semisweet mini chocolate chips, I like Enjoy Life brand, which are vegan
Instructions
- In a small bowl, combine coconut oil, maple syrup, and vanilla with a fork. Add flour and salt and mix until well blended. Mix in chocolate chips. Enjoy immediately, or refrigerate to thicken and stiffen the dough a bit.

Honestly I always eat it immediately, but I think it would keep in an airtight container in the refrigerator indefinitely.

I tried refrigerating it and it definitely kept it fresh! The only thing is that the coconut oil will harden the entire thing (you’ll even see white all around the edges if you store it in a clear container) so you must microwave it for ~10 seconds to enjoy 🙂

I haven’t tried it, but I don’t think it would be great. The coconut oil mixed with the maple syrup is what gives it the proper texture, but you could try melting the butter or swapping the maple syrup for sugar.

I made this at home tastes absolutely amazing. Did have to add a little extra syrup and more chocolate chips to make it taste proper but other than that I think this is a perfect swap if you’re vegan. (Tried it the other way too with sugar instead also tasted amazing that way)

I swapped out the flour for almond flour & I ran out of vanilla extract so I used vanilla almond milk instead and this is delicious! I’m not sure what others are complaining about but as someone who is vegan, this tastes like the vegan cookie dough I always buy! SO delicious!

Why not add in a step to toast the flour? Anyone making this recipe, please BEWARE: Flour should NOT be consumed raw!! Lindsay, by omitting this step, you are putting your readers’ healths at risk. I really dont think it’s her job to inform us of things most people should already know and if you dont know a quick Google search will let you know. Shes really not putting anyone at risk by sharing a recipe… people put themselves at risk by not looking into things properly themselves. Shes not making anyone eat it raw. Since this was posted several people have gotten every sick from eating raw flour from E-coli. That’s scary. Maybe heating the flour in the oven for a period of time would kill any dangerous pathogens.

Can I use only coconut flour to substitute for all purpose? Due to coconut flour’s absorbency, usually you use a quarter of the measurement for the all purpose flour. Would slightly less than a tbsp of coconut flour work then, or not really?

I haven’t used coconut flour much, so I’m not super familiar with how it behaves, but I would just add a little at a time until you get the desired consistency, or if it starts to get weird add another flour like almond or oat.

Thankfully e.coli is very rare, we just hear a lot about outbreaks on the news. There have not been any reported cases of e.coli from raw flour in a long time, I hope you were still able to enjoy your treat! Wow that was so good and just what I needed! I have a ton of food issues so really hard to find recipes these days. I used 1-1 GF flour and I can’t have vanilla so omitted that. People, it’s not gonna taste exactly like cookie dough…let’s be real…but it was really good and hit the spot for a sweet treat that tastes cookie dough like especially the texture. This was a delicious recipe and I love that is vegan. Please be aware that you should heat the flour in the oven. Raw flour has been linked to ecoli. I was actually unaware of this until about a year ago when I was reading through a recipe that mentioned heating the flour. Anyway, awesome recipe. Thank you!!
